Not much happened this week.... just lots of normal day to day activities....BORING. So, I decided to share a recipe that I found and tried this week :-) But first, a mini rant :-)
As some of you know, my hubby has worked 'nights' for a few years (well, kind of....he works in the entertainment industry so when they were filming and he was actually working it was 'nights'). He has recently changed jobs at the same company, so for the past month or so he was working a normal day while they 'trained' him, knowing that eventually the 'nights' would return. Yesterday he went into work in the morning and found out that they forgot to tell him he was switched back to nights....sigh. So he woke up at 6:30am to go to work, drove to work, found out he didn't have to be there until 5pm, drove home, drove back later, then worked from 5pm until 4:50ish am. It was one very long day. So I once again am having to adjust to the different schedule, the going to bed alone, and the trying to keep a 9 month old quiet in the mornings so daddy can sleep. If you think of it, pray for all of the above :-)
But, onto the recipe :-) It is a recipe that I found on Pinterest....eek...time waster (probably a good thing I lose internet in a few days). It is super simple, super yummy, and (at least for me) was a total comfort food.

Corn Chowder (More of a Potato/Corn Chowder in my opinion)
1 Tablespoon Butter
2 Tablespoons Celery, chopped (I substituted red bell pepper since I didn't have celery on hand)
2 Tablespoons Onion, chopped
2 Tablespoons Green Bell Pepper, chopped
2 Cups Fresh Corn, sliced off the cob (I used frozen corn)
1 Cup Potato, diced
1 Cup Chicken Broth
1/4 Teaspoon Paprika
1 Teaspoon Salt and Pepper, to taste
2 1/2 Cups Milk, divided
2 Tablespoons Flour (I used cornstarch since I can't have wheat)
-In a medium saucepan, melt butter over medium-high heat. Add celery, onion, green pepper and corn. Sauté for 2 minutes.
-Add potatoes, chicken broth, paprika, salt and pepper. Bring to a boil; reduce heat to medium and cook, covered, about 10 minutes or until potatoes are tender.
-Mix 1/2 cup milk with flour. Slowly mix into hot soup. Add rest of milk, and bring to a boil to thicken.
