Easter, Eggs, & Emotions


This past weekend was crazy to say the least.  In addition to celebrating the resurrection of our Lord and Savior! hubby’s family celebrates half of the birthdays for the year.  This adds up to one crazy Easter weekend with present wrapping, food prep, and general hustle and bustle.  This year I also decided to make the deviled eggs for our get-together… at least next time it won’t be so bad…J  Deviled eggs go quickly in this family and since it’s a fairly big family that means lots of eggs.  If only they hadn't failed!  After hard boiling about 32 eggs (and only 8 of them being usable after peeling) I was pretty discouraged.  I have never had so much trouble peeling hard boiled eggs!  So, after some consultations with those much wiser than me, I found two tried and true methods that worked.  The first: (works best on an electric stove)bring water to a boil,add eggs,boil 5-10 mins, turn off burner and let sit until water is completely calm, give eggs a cold bath and peel.  The second: steam eggs for 20-25 min, give a cold bath, peel.  Both of these worked much better for meJ  I also had some fun and dyed the eggsJ



Well, the emotional part of this weekend consisted of one of my brother-in-laws being missing for over 48 hrs.  He works as a long-haul trucker and had his truck stolen.  Thankfully he was safe,but those were a few days of roller-coaster emotions.  He finally got a hold of the family Easter morning and we were actually able to enjoy our Easter/birthday celebration!
