Kitchen Adventures

A few weeks ago my husband and I had the house to ourselves, a rare event :-) We decided to cook dinner together, something we love to do and rarely get the chance to at this point in our lives. It was a night of firsts, the first time I cooked a whole chicken and the first time I made jalapeno poppers wrapped in bacon (our splurge of the night!) I will not bother telling you how I did the chicken, there are a zillion recipes out there that I'm sure are much better than my random mix of spices.


Here is the instructions for the Bacon Jalapeno Poppers (which are not spicy in the least)

Ingredients:
However many jalapenos you feel like making
Cream cheese
Bacon (whichever kind you like)
Toothpicks

Instructions:
Cut each jalapeno in half lengthwise and take out all the membrane and seeds (if you want some spice leave the seeds in)
Fill each half with cream cheese
Wrap each in a strip of bacon and secure with toothpicks (picture below), if you want you can use less bacon and use 1/2 strip per popper
Place on wire rack over a cookie sheet so the bacon grease drips off
Cook at 350 degrees for around 20 minutes, until the bacon is nice and crispy
Remove toothpicks and serve :-)


These are definitely something we will be making again :-)
