New Bread Recipe

Hubby!!!
So yesterday I tried a new bread recipe. I can't decide whether or not I like it or not, I think there is a little too much of a hard crust for me but besides that it's decent. I think I might try it with a different flour next time and maybe not put it back into the oven the last time. It was fun to be able to work in the kitchen, and even more fun that my hubby helped me....and then read to me while we waited :-)

Here is the recipe I used:

Ingredients:
4 cups brown rice flour, plus a little extra for dusting
1 tbsp xanthan gum (for those who don't know, this acts like the gluten in wheat flour and helps it hold together)
Before Rising 
2 tbsp skimmed dried milk powder
1/2 tsp salt
2 x 1/4 ounce package active dried yeast
2 tsp granulated sugar
2 cups warm water
2 eggs, beaten
2 tbsp olive oil

Instructions:

1) Place the flour, xanthan gum, skimmed milk powder, and salt in a large bowl and mix together. Place the yeast, sugar, and water in another bowl and let stand in a warm place for 10 minutes, until frothy. Pour the yeast mixture, eggs, and oil into the dry ingredients and stir together to form a soft dough. Tip the dough out onto a surface dusted lightly with rice flour and kneed for 5 minutes.
After First Rising
2) Place the dough in a lightly oiled bowl, cover with a damp kitchen towel or plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size. Tip the dough out and reknead, then form into a long, oval shape, place on a baking sheet, and let rise again until it has doubled in size.
3) Meanwhile, preheat the oven to 400 degrees F. Score along the top of the loaf a few times using a knife. Place in the preheated oven for 45-50 minutes, or until golden brown and hollow-sounding when tapped. Remove the loaf from the sheet and return to the oven for 5-10 minutes to crisp it all over. Remove the loaf from the oven and transfer to a wire rack to cool.

I realized today how much I miss the kitchen and how much I want to have my own kitchen and be able to cook for my husband and to try new recipes. Maybe next week I'll try something new. We shall see :-)
